Raised in Tokyo and trained at GAFA in Vienna, Dominique’s 20 year career has taken him from The Ivy, The Ebury and The Bull in Highgate to Head Chef at Bruno Loubet’s renowned Bistro Bruno Loubet at the Zetter Hotel and Maremma restaurant in Brixton.
Dom has consulted on the opening of several restaurants including The Grain Store and The Cheese Bar, and worked as a private chef for the photographer Rankin. With his move to the West Country in 2020, Dom initially worked as Head Chef at Eight Stony Street, Frome and At The Chapel in Bruton before being part of the opening team of Little Walcot.
Dom can cook all range of food but excels in modern European, often with a fusion of Asian ingredients or style of plating. He is a passionate believer in working with local suppliers and matching sustainable, ethical and seasonal food and wines to create the perfect balance between taste and terroir.
